Ingredients
- 3 very ripe bananas
- 2 eggs
- 60 ml neutral oil
- 80 g sugar
- 220 g flour
- 1 tsp baking powder
- 2 tbsp Kinampay ube powder (about 20 g)
- 1 pinch of salt
Equipment
- A loaf tin
- A mixing bowl and a fork
Preparation
- Mash the bananas with a fork, then mix them with the eggs, oil and sugar.
- Stir in the flour, baking powder, ube powder and salt, until you get a smooth batter.
- Pour into the greased tin.
- Bake for 45 minutes at 170 °C, until a knife comes out clean. Let it cool slightly before turning out.
