Ingredients

  • Brownie layer: 100 g white chocolate, 60 g butter, 1 egg, 60 g sugar, 70 g flour, 2 tbsp Kinampay ube powder
  • Cookie layer: 80 g soft butter, 70 g brown sugar, 1 egg, 130 g flour, 1/2 tsp baking powder, 50 g chocolate chips

Equipment

  • A square tin
  • Two mixing bowls

Preparation

  1. Make the brownie batter: melt the white chocolate and butter, mix with the egg, sugar, flour and ube powder. Spread it over the bottom of the tin.
  2. Make the cookie dough: vigorously cream the butter and brown sugar, add the egg, flour, baking powder and chocolate chips.
  3. Drop pieces of cookie dough onto the brownie layer, without covering it completely.
  4. Bake 25 minutes at 175 °C: the brownie stays fudgy, the cookie golden. Leave to cool before cutting.
