Ube Brownie Cheesecake

The density of the brownie, the softness of the cheesecake, purple marbling that winds through: the ube brownie cheesecake is the double-pleasure dessert.

Two textures, a single bite.

Brownie cheesecake à l'ube, base brownie et cheesecake violet marbré

The marriage of dense and creamy

This dessert layers and marbles two mixtures: a fudgy white chocolate brownie and an ube cheesecake mix.

As they bake, the two bind without merging, creating purple marbling on a cream background. Each square offers the contrast of dense and creamy. A dessert that impresses with its looks as much as its taste.

💜 Did you know?

The marbling is done by dropping the cheesecake mix in dabs onto the brownie, then swirling with the tip of a knife.

The chef’s touch

The marbling plays out gently.

Drop the cheesecake mix in dabs, without covering everything, then swirl only just: over-mixed, the marble disappears. Take it out of the oven when the whole is set but still fudgy. A rest in the fridge makes cutting easier.

👨‍🍳 The chef’s tip

Chill it before cutting: the brownie cheesecake slices much more cleanly once cold.
