Ingredients
- Choux pastry: 125 ml water, 125 ml milk, 100 g butter, 150 g flour, 4 eggs, 1 pinch of salt
- Ube cream: 400 ml milk, 3 egg yolks, 80 g sugar, 40 g cornflour, 2 tbsp Kinampay ube powder

Method
- Make the cream: mix the ube powder into a little milk, heat the rest, combine with the yolks, sugar and cornflour, then thicken over the heat. Cover with cling film and chill.
- Make the choux pastry: bring the water, milk, butter and salt to the boil, add the flour all at once, dry it out over the heat, then beat in the eggs one at a time.
- Pipe small mounds onto the tray and bake for 25 minutes at 180 °C, without opening the oven.
- Let cool, then fill the choux with the ube cream using a piping bag.
