Ube Chia Pudding

Melting pearls, a purple cream, a spoon that sinks in effortlessly: the ube chia pudding is as beautiful as it is comforting.

Make it the night before, savour it on waking, cool and velvety.

Chia pudding à l'ube violet, myrtilles et mangue

The little seed that does it all

On contact with milk, the chia seed swells and forms a soft gel.

That's what gives the pudding its unique texture, between tapioca and a dessert cream. Ube joins in for the colour and the vanilla sweetness, without dominating. A light breakfast, but one that keeps you going.

💜 Did you know?

Chia seeds are rich in fibre and swell up to ten times their volume: a small spoonful is enough to fill you up.

The chef's touch

It all comes down to the double mix.

Whisk once, then a second time after 10 minutes: that's what stops the seeds from clumping at the bottom. Keep to a ratio of about one part chia to six of milk. The longer you let it rest, the firmer the texture.

👨‍🍳 The chef's tip

For a two-tone effect, alternate a layer of plain pudding and a layer of ube pudding in the glass.

To avoid

The mistakes to avoid

Three pitfalls for a smooth, lump-free pudding.

Whisking only onceThe seeds form a block at the bottom. Whisk again after 10 minutes.
Too much chiaThe pudding turns compact. Use one part chia to six of milk.
Too short a restThe texture stays liquid. Chill for at least 4 hours.
