Ube Yoghurt
Two minutes, three ingredients, and a yoghurt in a soft purple, drizzled with honey and crowned with granola.
The quickest breakfast in the family, and not the least indulgent.

Simplicity, in purple
Sometimes the best breakfast is also the simplest.
A good Greek yoghurt, thick and tangy, a spoon of ube powder for colour and sweetness, a drizzle of honey to bind it: that's already a complete bowl. The toppings do the rest, between crunch and freshness.
The acidity of the yoghurt slightly shifts the ube's colour towards pink-purple: a natural gradient, no colouring.

One habit for a perfectly smooth yoghurt.
Always dissolve the ube in a small amount of yoghurt first, before stirring it into the rest: you'll avoid lumps. Choose a good thick Greek yoghurt for a rich texture, and adjust the honey to your taste.
Make a big pot of ube yoghurt for several days: it keeps perfectly in the fridge.

All you need is Kinampay ube powder.
Your questions about this recipe.
How do you make an ube yoghurt?
Dissolve a spoon of ube powder in a little yoghurt, stir into the rest, cover with honey and top with granola and fruit.
Which yoghurt should you use?
A thick Greek yoghurt gives the richest texture; a plant-based yoghurt also works very well.
Does the ube yoghurt contain caffeine?
No, ube is naturally caffeine-free.
Can you make it ahead?
Yes: the yoghurt mixed with ube keeps for several days in the fridge. Add the toppings when serving.
Why does my ube yoghurt turn pinkish?
It's the acidity of the yoghurt shading the ube's colour: a natural, harmless effect.
