Ube Pancakes
Thick, fluffy, a soft purple at the core: ube pancakes stacked under a drizzle of maple syrup are the quintessential weekend breakfast.
One batter, one pan, and the purple stack rises before your eyes.

The stack that makes the weekend
A good pancake is thick and airy at once.
The baking powder makes the batter rise, the egg and milk bind it, and the ube colours the crumb a soft purple while adding fragrance. The result: fluffy pancakes, barely vanilla, glorious with maple syrup or fruit.
For well-risen pancakes, you must not overwork the batter: a few lumps are better than a smooth, elastic batter.

Two details make all the difference.
Mix the batter only until it just comes together: overworked, it gives flat, rubbery pancakes. Cook over medium heat, never too high, to cook through without burning. Flip as soon as the bubbles burst on the surface.
Let the batter rest for 5 minutes before cooking: the baking powder works and the pancakes rise even better.

All you need is Kinampay ube powder.
Your questions about this recipe.
How do you make ube pancakes?
Mix the dry ingredients (including the ube powder), add the beaten egg and milk without overworking the batter, then cook in the pan for 2 to 3 minutes per side.
Why are my pancakes flat?
The batter was overmixed or the baking powder is missing. Mix just enough and let it rest for 5 minutes.
Do ube pancakes contain caffeine?
No, ube is naturally caffeine-free.
Can you make the batter ahead?
It keeps a few hours in the fridge, but the pancakes are best cooked just after the batter has rested.
Can you make them vegan?
Yes: replace the egg with apple purée or a flax egg, and use a plant milk.
