Ube Porridge
Warm, creamy, comforting: ube porridge is the reassuring bowl of cool mornings, a soft purple that gently wakes you.
Ten minutes on the hob, and the oats turn to velvet.

Morning comfort
Porridge is oats slowly cooked in milk until creamy.
The cooking releases the starch from the oats, which binds the bowl into a velvety texture. The ube brings its colour and vanilla roundness, the honey a touch of indulgence. A warm breakfast that keeps you going.
The more you stir the porridge as it cooks, the creamier it gets: the movement releases the starch from the oats.

The creaminess comes from care taken over the cooking.
Stir regularly over low heat: it is the movement that releases the starch and binds the porridge. Add the ube at the end of cooking, blended, to preserve its colour. If the porridge thickens too much, loosen it with a little warm milk.
A pinch of salt, even in a sweet porridge: it wakes up all the flavours, the ube included.
