Crisp at the edges, soft in the middle, golden and purple in their pockets: ube waffles are a breakfast to celebrate.

An iron, a batter, and the scent of vanilla fills the kitchen.

The celebratory breakfast

The waffle plays on contrast: crisp outside, tender inside.

Melted butter brings the crunch, eggs and milk the softness, and ube dresses it all in a gourmet purple. Served warm with icing sugar or fruit, they turn an ordinary morning into a special moment.

💜 Did you know?

A waffle's pockets aren't just for looks: they increase the crisp surface and hold syrup perfectly.

The chef's touch

Crispness is earned in the cooking.

Let the waffle brown well before opening the iron: opening too soon tears it and leaves it soft. A really hot iron, lightly oiled at the start, stops it sticking. Serve straight away, while it's still crisp.

👨‍🍳 The chef's tip

Keep the waffles crisp in the oven at 100 °C, set on a rack, while you cook the rest of the batch.

To avoid

Mistakes to avoid

Three mistakes between you and crisp waffles.

Opening the iron too soonThe waffle tears and stays soft. Wait until it is golden.
A waffle iron that is not hot enoughThe batter sticks and cooks badly. Preheat well before the first waffle.
Stacking them hotThe steam softens them. Set them on a rack, never in a pile.
