The ube milk, sweet and colourful, pairs with the tapioca pearls (the famous “boba”) that bring their signature chew. A real homemade bubble tea, endlessly customisable.
Real bubble tea contains tea (and therefore caffeine). Here, with an ube-and-milk base, the version is caffeine-free; add tea if you like.

Ingredients
- 1 tsp Kinampay ube powder (about 5 g)
- 1 tsp hot water
- 250 ml milk of your choice
- 2 tbsp tapioca pearls (boba)
- 1 to 2 tsp syrup (cane sugar, maple…)
- Ice cubes
Equipment
- A saucepan (for the pearls)
- A large glass
- A wide bubble tea straw
Preparation
- Cook the tapioca pearls according to the packet instructions, then drain and coat them in a little syrup.
- Dissolve the ube powder in the hot water, then mix into the cold milk.
- Place the pearls at the bottom of the glass, add ice cubes.
- Pour the ube milk over the top, stir and enjoy with a wide straw.
