The principle is the same as the hot version, but served cold: the ube base stays at the bottom, the milk glides over the ice cubes, and the famous purple gradient appears. It’s as pretty as it is good.

Ingredients
- 1 tsp Kinampay ube powder (about 5 g)
- 1 tsp hot water
- 200 ml very cold milk (oat, coconut, almond…)
- 1 tsp maple syrup or sugar (optional)
- A handful of ice cubes
Equipment
- A tall glass
- A small whisk or a milk frother
- A spoon
Preparation
- Dissolve the ube powder with the hot water until you get a smooth, glossy paste.
- Pour this ube base into the bottom of the glass.
- Fill with ice cubes.
- Slowly pour the very cold milk over the top, to create the purple gradient.
- Sweeten if needed, stir just before drinking, and enjoy.

Two details make the most beautiful gradient.
Very cold milk. The colder the milk, the more slowly it sinks and the sharper the gradient. Pour very gently, over the ice cubes, without stirring right away: let the colour take shape before you stir.
Taste before sweetening. Cold, ube seems a little less sweet than hot: half a spoon of syrup is often enough.

How do you make an ice ube latte?
Dissolve a teaspoon of ube powder in a little hot water, pour it into the bottom of a glass, add ice cubes then 200 ml of very cold milk over the top. Stir just before drinking.
How do you get the purple gradient?
Pour the cold milk very slowly over the ice cubes, on top of the ube base, without stirring right away. The colour forms on its own.
