Ingredients

  • Sponge: 4 eggs, 100 g sugar, 80 g flour, 1 tbsp Kinampay ube powder
  • Cream: 300 ml very cold whipping cream, 100 g white chocolate, 2 tbsp Kinampay ube powder, 2 tbsp icing sugar

Equipment

  • A Swiss roll tin
  • A clean tea towel
  • A whisk

Preparation

  1. Make the sponge: whisk the eggs and sugar until the mixture triples, fold in the flour and ube powder. Spread on the tin and bake 10 to 12 minutes at 180 °C.
  2. Roll the warm sponge in a damp tea towel and let it cool that way.
  3. Make the cream: melt the white chocolate, whip the cold cream with the icing sugar and ube, then fold in the warm chocolate.
  4. Unroll the sponge, spread the cream, roll again and decorate. Chill for at least 2 hours.
