Ingredients
- Sponge: 4 eggs, 100 g sugar, 80 g flour, 1 tbsp Kinampay ube powder
- Cream: 300 ml very cold whipping cream, 100 g white chocolate, 2 tbsp Kinampay ube powder, 2 tbsp icing sugar
Equipment
- A Swiss roll tin
- A clean tea towel
- A whisk
Preparation
- Make the sponge: whisk the eggs and sugar until the mixture triples, fold in the flour and ube powder. Spread on the tin and bake 10 to 12 minutes at 180 °C.
- Roll the warm sponge in a damp tea towel and let it cool that way.
- Make the cream: melt the white chocolate, whip the cold cream with the icing sugar and ube, then fold in the warm chocolate.
- Unroll the sponge, spread the cream, roll again and decorate. Chill for at least 2 hours.
