Ingredients

  • Sponge: 3 eggs, 90 g sugar, 90 g flour
  • Cream: 400 ml milk, 3 egg yolks, 80 g sugar, 40 g cornflour, 2 tbsp Kinampay ube powder, 150 g softened butter
  • 500 g strawberries

Equipment

  • A pastry ring

  • A saucepan

Method

  1. Make the sponge: whisk eggs and sugar, fold in the flour, spread and bake for 12 minutes at 180 °C.
  2. Make an ube pastry cream, let it cool then beat in the softened butter for a buttercream custard.
  3. Cut two sponge discs, line the ring with halved strawberries (flat side against the wall), then alternate sponge, cream and strawberries.
  4. Smooth the top and chill for at least 3 hours before removing the ring and serving.
