Ingredients
- Sponge: 3 eggs, 90 g sugar, 90 g flour
- Cream: 400 ml milk, 3 egg yolks, 80 g sugar, 40 g cornflour, 2 tbsp Kinampay ube powder, 150 g softened butter
- 500 g strawberries
Equipment
- A pastry ring
- A mixer
- A saucepan
Method
- Make the sponge: whisk eggs and sugar, fold in the flour, spread and bake for 12 minutes at 180 °C.
- Make an ube pastry cream, let it cool then beat in the softened butter for a buttercream custard.
- Cut two sponge discs, line the ring with halved strawberries (flat side against the wall), then alternate sponge, cream and strawberries.
- Smooth the top and chill for at least 3 hours before removing the ring and serving.
