Ingredients
- 200 g pumpkin purée
- 2 eggs
- 60 ml neutral oil
- 100 g sugar
- 220 g flour
- 1 tsp baking powder
- 1 tsp mixed spice
- 2 tbsp Kinampay ube powder (approx. 20 g)
Equipment
- A loaf tin
- A bowl and a whisk
Method
- Mix the pumpkin purée, eggs, oil and sugar.
- Fold in the flour, baking powder, spices and ube powder, until an even batter.
- Pour into the buttered tin.
- Bake for 50 minutes at 170°C, until a blade comes out clean. Leave to cool slightly before turning out.
