Ingredients

  • 150 g ube halaya (see recipe)
  • 200 ml cold whipping cream
  • 2 tbsp icing sugar
  • 1 tsp vanilla extract
  • Speculoos or shortbread biscuits, crumbled

Preparation

  1. Whip the cold cream with the icing sugar and vanilla into a firm whipped cream.
  2. Crumble the biscuits for the crunchy layer.
  3. In each glass, alternate a layer of ube halaya, a layer of whipped cream and biscuit shards.
  4. Repeat to the top, finish with a swirl of whipped cream and a dusting of biscuit. Chill until serving.
