White chocolate, melted into the milk, brings a roundness and a shine that turn the latte into velvet. Ube lays down its colour and its vanilla sweetness. The result is a dense, silky drink, to savour slowly, with your eyes closed.

Ingredients
- 1 tsp Kinampay ube powder (about 5 g)
- 1 tsp hot water
- 250 ml milk of your choice
- 25 g white chocolate
- 1 pinch of salt
Equipment
- A small saucepan
- A whisk or a frother
- A mug
Method
- Dissolve the ube powder with the hot water, until you have a smooth base.
- Heat the milk gently and melt the white chocolate into it, whisking, without letting it boil.
- Add the ube base and the pinch of salt, then whisk until velvety and frothy.
- Pour into the mug and enjoy piping hot.
