The Purple Sunrise Latte was born in our kitchen, from the urge to tell a dawn as a drink.

At the bottom, the mango brings its orange light and its acidity; above, the ube lays down its soft, vanilla purple. Between the two, a natural gradient forms before your eyes. An exclusive signature, designed to amaze as much as to delight.

Ingredients

  • 1 tsp Kinampay ube powder (about 5 g)
  • 1 tsp hot water
  • 200 ml very cold milk of your choice
  • 2 tbsp mango purée
  • 1 tsp maple syrup
  • Ice cubes

Equipment

  • A large glass
  • A small whisk or milk frother

Preparation

  1. Dissolve the ube powder in the hot water until a smooth base, then leave to cool.
  2. Mix the mango purée with the syrup and place it at the bottom of the glass.
  3. Add the ice cubes, then gently pour the cold milk over the top.
  4. Finally pour the ube base slowly, over the back of a spoon, to create the gradient from purple to orange. Stir just before drinking.
