The Velvet Ube Cheesecake takes the ube cheesecake to even greater refinement.
White chocolate, melted into the mixture, gives it an incomparable hold and silkiness, with no baking. Ube unfolds its colour and sweetness on a base of buttery biscuits. A festive dessert, with a silky texture, designed to make an impression.
Our signature version relies on white chocolate for a no-bake set and a velvet texture found nowhere else.

Ingredients
- 200 g shortbread biscuits
- 80 g melted butter
- 300 g cream cheese
- 200 ml very cold double cream
- 120 g white chocolate
- 2 tbsp Kinampay ube powder (about 20 g)
- 2 tbsp icing sugar
Equipment
- A springform tin
- A mixer
- A saucepan
Method
- Blitz the biscuits, mix them with the melted butter and press into the base of the tin. Chill.
- Melt the white chocolate and let it cool to lukewarm. Dissolve the ube powder in a little cream.
- Whisk the cream cheese with the icing sugar, fold in the lukewarm chocolate and the ube base.
- Whip the cold cream to soft peaks and gently fold it in, then pour over the base.
- Smooth and chill for at least 4 hours (ideally overnight) before unmoulding.
