The chef's touch

The perfect gradient comes down to a well-concentrated syrup.

Make a thick ube syrup with little water: the more concentrated it is, the more nicely it sinks through the glass. Pour it slowly over the ice cubes. The oat milk, naturally creamy, gives the silkiest foam.

👨‍🍳 The chef's tip

Clear, large-format ice cubes melt more slowly and make the gradient even cleaner.

To avoid

The mistakes to avoid

Three pitfalls for a perfect iced latte.

Too dilute a syrupThe gradient is pale and blends in. Concentrate the ube syrup.
Pouring too fastThe layers blur. Pour slowly over the ice cubes.
Milk that isn't cold enoughThe ice melts and dilutes. Use a very cold milk.
