Ube Brownies
Dense, fudgy, marbled with purple and white: ube brownies (or blondies) play the card of pure indulgence.
One square is enough to satisfy, but you always come back for more.

The blondie turns purple
Here, no cocoa: it’s the white chocolate that gives the fudginess, blondie-style.
Ube brings its intense colour and its sweetness, creating an irresistible purple and cream marble. The texture, dense and fudgy, contrasts with the thin crust on top. A treat that cuts into squares and is shared.
A fudgy brownie means little flour and no baking powder: you want density, not airy cake.

The fudginess is protected during baking.
Take the brownie out when the centre is still a little wobbly: it sets as it cools. Only cut it once cold, otherwise it crumbles. A blade run under hot water gives clean squares.
Set aside a spoonful of plain batter and drop it in a spiral on top: you get a beautiful purple and white marble.

Your questions about this recipe.
How do you make ube brownies?
Melt white chocolate and butter, mix with the eggs, sugar, flour and ube powder, then bake 25 minutes at 170 °C keeping the centre fudgy.
Why are my brownies dry?
They were overbaked or contain too much flour. Reduce the baking time and weigh precisely.
Can they be made without white chocolate?
Yes: replace it with extra butter and a little more sugar for a simpler blondie.
Do ube brownies contain caffeine?
No, ube is naturally caffeine-free.
How do you store them?
3 to 4 days in an airtight box; they also freeze very well.
