The crêpe goes purple

The crêpe is a blank canvas, or rather a purple one, ready to welcome anything.

Ube colors the batter and gives it a vanilla sweetness that calls for coconut, white chocolate or fruit. Thin and supple, these crêpes are enjoyed at breakfast as well as dessert. A basic transformed.

💜 Did you know?

A crêpe batter that rests for an hour makes more supple crêpes: the flour hydrates fully.

The chef's touch

Good crêpes come down to the batter and the pan.

Let the batter rest for supple crêpes, and aim for a consistency that's neither too thick nor too runny. A hot, barely greased pan keeps them from sticking. Adjust with a splash of milk if the batter thickens.

👨‍🍳 The chef's tip

Fill them with coconut cream and mango: the tropical pairing elevates ube.
