Ingredients
- 200 g shortbread biscuits
- 80 g melted butter
- 600 g cream cheese (Philadelphia type)
- 120 g sugar
- 2 eggs
- 2 tbsp Kinampay ube powder (approx. 20 g)
- 1 tsp vanilla extract
Equipment
- A springform tin
- A mixing bowl and a whisk
- An oven
Method
- Blitz the biscuits, mix them with the melted butter and press into the base of the tin. Chill.
- Whisk the cream cheese with the sugar, then beat in the eggs one at a time.
- Mix the ube powder into a little of the mixture, then pour it all back and mix until the colour is even.
- Pour onto the base and bake for 45 minutes at 160 °C: the centre should still wobble slightly.
- Let it cool in the switched-off oven, then chill for at least 4 hours before unmoulding.
