Ingredients

  • 200 g flour
  • 1 egg
  • 100 g melted butter
  • 100 g sugar
  • 120 ml milk
  • 1 tbsp Kinampay ube powder (approx. 10 g)
  • 1 tsp baking powder
  • 80 g white chocolate chips

Equipment

  • A muffin tin and paper cases
  • Two mixing bowls

Preparation

  1. Preheat the oven to 190 °C. Mix the flour, baking powder, sugar and ube powder.
  2. Beat the egg with the milk and melted butter, then pour over the dry ingredients.
  3. Mix just enough to bring the batter together, then fold in the white chocolate chips.
  4. Divide among the cases and bake for 20 minutes, until a skewer comes out dry.
