Financiers à l'ube violets aux amandes effilées

The chic little bite

The financier owes its finesse to ground almonds and browned butter.

This lightly toasted butter brings a hazelnut taste that marries the vanilla softness of ube. The texture, soft and dense, melts in the mouth. A refined bite, ideal with a coffee or a tea.

💜 Did you know?

The financier uses only egg whites: it's traditionally a pastry chefs' no-waste recipe.

The chef's touch

All the flavour comes from the butter.

Take the butter to a nutty brown, without burning it: that's where its aroma is born. Don't whip the egg whites, simply fold them in. Resting the batter in the fridge before baking intensifies the softness even more.

👨‍🍳 The chef's tip

Serve them barely warm: the centre is then at its most meltingly soft.

To avoid

Mistakes to avoid

Three pitfalls for soft financiers.

Burnt butterIt turns bitter. Stop cooking as soon as it's nutty brown.
Whipping the egg whitesThe texture turns dry. Fold them in without whipping.
OverbakingThey dry out. Take them out when the edges are golden and the centre soft.
