Ingredients

  • 150 g flour
  • 90 g soft butter
  • 80 g brown sugar
  • 1 egg
  • 1 tbsp Kinampay ube powder (approx. 10 g)
  • 1/2 tsp baking powder
  • 80 g white chocolate chips

Equipment

  • A mixing bowl
  • A tray and baking paper
  • An oven

Preparation

  1. Work the soft butter with the sugar until pale and creamy.
  2. Add the egg, then the flour, baking powder and ube powder. Mix without overworking.
  3. Fold in the white chocolate chips.
  4. Shape spaced balls on the tray and bake for 11 to 12 minutes at 180 °C: the edges brown, the center stays light.
  5. Let cool on the tray: the cookies finish setting as they cool.
