Panna cotta is cream set just enough.

A touch of gelatine gives it its wobbling, melting texture. The ube tints it a soft purple and subtly perfumes it. Served with a fruit coulis, it plays on the contrast of colours as much as flavours.

Ingredients

  • 400 ml single cream
  • 100 ml milk
  • 50 g sugar
  • 2 tbsp Kinampay ube powder (approx. 20 g)
  • 2 gelatine leaves (or 3 g agar-agar)

Equipment

  • A saucepan
  • Glasses or moulds
  • A whisk

Method

  1. Soften the gelatine in cold water.
  2. Heat the cream, milk and sugar without boiling, then whisk in the ube powder.
  3. Off the heat, stir in the drained gelatine and mix well.
  4. Pour into the glasses and refrigerate for at least 4 hours, until set.
  5. Serve as is or topped with a fruit coulis.
