Ube Cake
A soft purple crumb, a golden crust, a vanilla scent that fills the kitchen: the ube cake is the snack-time cake par excellence.
Simple to make, it slices and shares without fuss.

The snack-time cake
The loaf cake is simplicity itself: you mix, you bake.
Butter and eggs give the softness, ube the colour and sweetness. Neither too sweet nor too rich, it’s enjoyed plain, warm, or topped with a glaze. A must to keep up your sleeve.
The cake’s colour stays vivid because ube doesn’t oxidise during baking like some fruits: the purple holds in the oven.

A successful cake comes down to well-creamed butter.
Cream the soft butter with the sugar until it pales and turns fluffy: that’s what gives the softness. Don’t open the oven early in baking, or the cake will sink. Check with the tip of a knife.
For the famous crack on top, score the batter in one line halfway through baking with a buttered blade.

All you need is Kinampay ube powder.
Your questions about this recipe.
How do you make an ube cake?
Vigorously cream the butter and sugar, add the eggs, flour, baking powder and ube powder, then bake 45 minutes at 170 °C.
Why is my cake compact?
The butter was poorly creamed or the baking powder forgotten. Cream the butter and sugar well and check the baking powder.
Can you add a glaze?
Yes: an icing sugar and milk glaze, tinted with ube if you like, takes the cake to the next level.
Does the ube cake contain caffeine?
No, ube is naturally caffeine-free.
How do you keep it soft?
Wrapped in film, it stays soft for 3 to 4 days at room temperature.
