Tiramisu goes purple

We keep the creamy mascarpone filling and swap the coffee for ube.

The ube powder, dissolved in a little milk, soaks the biscuits in a gentle, vanilla-scented purple. The result is a wonderfully light dessert, less bitter than the original, perfect for those who love sweetness. A festive dessert, no oven.

Ingredients

  • 250 g mascarpone
  • 2 eggs
  • 60 g sugar
  • 1 packet of ladyfinger biscuits
  • 2 tbsp Kinampay ube powder (about 20 g)
  • 200 ml milk
  • Ube powder for dusting

Equipment

  • Two mixing bowls
  • A dish or glasses
  • A whisk

Method

  1. Separate the whites from the yolks. Whisk the yolks with the sugar, then fold in the mascarpone.
  2. Whisk the whites to stiff peaks and gently fold them into the cream.
  3. Dissolve the ube powder in the warm milk to make a purple milk.
  4. Quickly dip the biscuits in the ube milk and alternate layers of biscuits and cream.
  5. Chill for at least 4 hours, then dust with ube powder before serving.
