Ingredients

  • 150 g flour
  • 1 egg
  • 80 g soft butter
  • 100 g sugar
  • 80 ml milk
  • 1 tbsp Kinampay ube powder (approx. 10 g)
  • 1 tsp baking powder
  • Frosting: 100 g cream cheese, 50 g butter, 80 g icing sugar, 1 tsp ube powder

  • A cupcake tin and paper cases
  • A mixer

Preparation

  1. Work the soft butter with the sugar until pale and creamy, add the egg, then the flour, baking powder and ube powder, alternating with the milk.
  2. Divide among the cases and bake for 18 minutes at 180 °C, until a skewer comes out clean.
  3. Let cool completely.
  4. Whisk the cream cheese, butter, icing sugar and ube powder into a smooth frosting, then pipe it onto the cupcakes.
