It comes from a contrast in temperature: a well-chilled batter in a very hot oven. Ube colours the crumb a soft purple and gently flavours it. Each madeleine becomes a little celebration to enjoy warm.

Ingredients
- 100 g flour
- 2 eggs
- 90 g melted butter
- 80 g sugar
- 1 tbsp Kinampay ube powder (approx. 10 g)
- 1/2 tsp baking powder
Equipment
- A madeleine tin
- A mixing bowl and a whisk
Preparation
- Whisk the eggs with the sugar until the mixture pales and doubles in volume.
- Add the flour, baking powder and ube powder, then the melted butter.
- Cover and chill the batter for at least 1 hour (ideally overnight).
- Fill the moulds three-quarters full and bake for 10 minutes in an oven preheated to 210 °C, then lowered to 180 °C.
